Water is a chemical compound that exists as a liquid in the body. It is a crucial part of the body systems and has even been called ‘the liquid of life.’

Water has been known to prevent a number of illnesses hence restoring ones health. Most of these illnesses are; cancer of the colon, breast and the lungs. Drinking water may not necessarily eliminate the possibility of getting these cancers; it simply reduces the probability of their occurrence.

Due to the crucial role played by water, lack of it causes some immediate symptoms. First of all, one experiences headaches and fatigue. Subsequently, one may loose part of their memory and may have trouble remembering small things. Water ensures that one does not have trouble concentrating because it is said that absence of water reduces one’s concentration span. (Kent, 1997)

Constipation is prevented by water. This is done through easing digestion by providing a solvent in which the toxins can dissolve.

Water is said to be the perfect moisturizer for our skin and prevents patchiness. It is also used to control one’s emotions.

Water has numerous bodily functions. Perhaps its most important is the fact that it is a constituent of most cells, organs and systems in the body. It is a fact that water makes up about 90% of the lungs, over ninety percent of the brain and about eighty percent of blood. There are plenty of fluids in the body that mainly consist of water; one of these is saliva.

Water is used to protect the interior organs from external shock. One such organ is the heart. In line with this role, water makes up most of the fluid that is found in between joints, as such, it is used as a lubricant to ease bodily movements.

Transportation in the body is mainly done by water. It transports waste products from their areas of production such as the kidneys to the external environment. It therefore gets rid of toxins from the body. Water also transports oxygen from the lungs to other parts of the body that are in need of it. Nutrients are also transported by water from the digestive system to muscles and other body parts in need of it.

Temperature regulation is another very important function of water. It acts as a kind of thermostat in the body. When body temperature exceeds optimum levels, the body sweats. Sweat mainly consists of water which normally leaves with a lot of heat when it evaporates thus cooling the body. This property of water is called high latent heat of vaporization.

Water is used for detoxification purposes by getting rid of wastes that are carried by the intestinal tract. As such it ensures that the body is in great health.

Lack of water in the body causes thirst. This is incase the amount of water under consideration is a small amount. The thirst then graduates to a more uncomfortable symptom; fatigue. One’s body feels restless and inactive. Eventually, headaches set in as the brain is now complaining. If the condition persists, then dizziness sets in and eventually one complains of feeling heaviness in their head. These are all signs of dehydration.

When the body is constantly denied access to water, reverse osmosis occurs. Instead of water leaving the body and getting filtered into the brain cells, the opposite occurs. Water leaves the cells and enters the system. This means that the body develops an elevated blood pressure since it is going against the norm. High blood pressure can be disastrous if allowed to continue without checking it.

There are some emotional manifestations of a lack of water in the body. One who has not had a lot of water is normally quite irritable and moody. They are quick to anger and are full of impatience.

Constant dehydration also causes a number of illnesses that may be fatal. Some of these include; weak immunity, hypertension and the very dangerous diabetes.

Sodium is mostly obtained from salt which is a compound made of both sodium and chlorine. It is put to use in the nervous systems during transportation of a message from one part of the body to another or from the external environment to the body. These messages may include; pain, heat and electric shock. There is a need for proper electrolyte balance within the body for any stimulant to be recorded well by the body.

Potassium is used to control the sodium balance within the body to ensure that metabolic systems function well. Chlorine serves to neutralize sodium because it is negatively charged while sodium is a positively charged ion. The two complement each other and thus chlorine maintains adequate balance in the body.

There’s a hormone in the body that is responsible for absorption of water back from the kidneys. It is called vasopressin. This hormone helps the body to maintain a balance of water thus preventing excessive loss. Consumption of alcohol causes a depression of Vasopressin meaning that plenty of water will not be reabsorbed and most of it will go to waste as urine. (Ellen, 1980)

Alcohol also causes severe loss in nutrients that are quite important to the body. These nutrients include; calcium, zinc, potassium and sodium. This in turn affects the body’s nervous system and balance of fluids.

It causes prolonged dehydration; this was shown in a research where people’s blood was tested. Most of them were found to have thicker blood especially due to frequent urination.

Caffeine also lowers levels of hydration. This happens by dieresis which is the process of excess absorption of water from blood in the kidneys. Caffeine also inhibits the reabsorption of sodium hence interrupting the hydration process.

The first step is to drink plenty of water. Doctors advise us to take about 8 glasses of water per day. This will ensure proper physical and psychological health.

One should avoid alcohol and caffeinated drinks. This is because the latter mentioned substances enhance the loss of water through the kidneys and must be kept at a minimum or avoided altogether (Barbara, 2004).

If one engages in heavy activities, then one should not wear heavy clothes because they increase the rate at which a body is sweating. The more one sweats, the more the fluid they loose from the body and the more the chances of dehydration.

There are some tell – tale signs that come with hydration. Individuals must learn to recognize them as soon as possible and to do something about them. These include; patchy or dry lips, thick urine, heavy eyes and mild headaches.

Individuals must also protect themselves from excessive sunshine which brings about sweatiness hence water loss from the body. They can do this by standing under a shade when exposed.

The importance of hydration

Water serves as a building block in all of our body's cells as well as in the many tissues and compartments. Due to its high heat capacity, water aids in thermoregulation by reducing body temperature fluctuations in warm or cold environments 1 . It acts as a carrier in the human body and aids in the transportation of nutrients to the cells. 2

Other important functions regulated by water include the removal of waste from the body 2 and regulation of blood circulation 3 . It also facilitates the exchange between ions, capillaries, and blood vessels. 3

There are three main sources of water inputs. First, the water that we drink is made up of water and other liquids that have a high water content—85 to >90%. Next is the water we consume from a variety of meals that range in water content from 40 to >80%. Finally, the oxidation of macronutrients yields the water that we make. 4

Dehydration can lead to acute disorders like heatstroke, but it can also raise the risk of chronic kidney disease, kidney stones, urinary tract infections, metabolic diseases, and cardiovascular diseases 5 . Dehydration-related body mass losses of more than 2% are often linked to increased tiredness and decreased attention 6 .

The science of hydration

Healthy people who maintain their water balance are in a normal hydration state. Being able to determine the level of hydration in people who are exposed to environmental factors that can cause dehydration is practically crucial. 7

Hydration plays several important roles, particularly for neurological function (such as mood and cognitive function), gastrointestinal and renal function, body weight and composition, and skin health. The Food and Nutrition Board of 2004 established values for a sufficient intake of water from liquids. 0.7 liters per day for babies ages 0–6 months, 0.6 liters per day for babies ages 7–12 months, 0.9 liters per day for kids ages 1-3, and 1.2 liters per day for kids ages 4–84. For male teenagers ages 9 to 13, 14 to 18, and adult males, the requirement of water is 1.8, 2.6, and 3.0 liters of water per day. Female teenagers between the ages of 9 and 13 require 1.6 liters per day, 14 to 18 require 1.8 liters per day, and adult females require 2.2 liters per day. 4

Healthy humans precisely control their daily water balance despite having different water needs. On the other hand, dehydration poses a bigger risk to older individuals and newborns than to adults. In addition to encouraging those who are at risk of dehydration to drink more water, parents and other caregivers should be aware of the symptoms of dehydration in young children and older adults. 4

According to the National Council of Aging, some common myths related to water consumption are that drinking liquids is the only way to stay hydrated, everyone should drink eight glasses of water per day, one cannot drink too much water, and if a person is not thirsty, then they are not dehydrated. 9 These are common misconceptions because it is possible to overindulge in water and consume more than your body can process, which can result in a condition known as hyponatremia or water poisoning.

Additionally, thirst is not always a reliable indicator of proper hydration. Cucumbers, celery, strawberries, and watermelon are fruits that increase fluid intake, as do dishes like soups, broths, and stews. 9

Getting adequate fluids each day is the best defense against dehydration. According to NIH, water or other low-calorie drinks, like plain coffee or tea, effervescent or flavored waters, can be ideal sources of fluids. Nutritious drinks like pure vegetable juice or milk or its substitutes are also excellent choices.

Drinking more is advised when exercising or being active in hot weather because these activities cause increased sweating. However, doctors normally advise women to drink approximately 9 cups of fluid each day and males approximately 13 cups.

Urinating more frequently can be caused by some illnesses, such as diabetes or chronic renal disease, as well as some medications. As a result, individuals suffering from these conditions should focus on consuming more water. 13

Understanding different hydration sources

The European Hydration Institute has documented a plethora of hydration sources that can be consumed regularly. Non-alcoholic beverages like tea, coffee, sports drinks, soft drinks, and lemonade comprise water content of up to 90% to 100%. Alcoholic beverages like beer and wine and soups like mushroom cream and noodles with chicken include a water content of 80% to 95%. Dairy products like whole milk, yogurt, ice cream, and cheese have a water intake of 87-90%, 75-85%, 60-65%, and 40-60%, respectively. 14

With an understanding of the mechanisms governing the water balance and the key physiological activities of water, a sedentary adult should drink 1.5 liters of water per day on average. This can ensure that the body stays hydrated and functions correctly. 4

Deficits in body water can have an impact on function and health and make it more difficult to maintain homeostasis under perturbations like illness and physical activity 8 . Drinking water quality is paramount for public health. Despite improvements in recent decades, access to good quality drinking water remains a critical issue. The World Health Organization estimates that almost 10% of the population in the world do not have access to improved drinking water sources [ 1 ], and one of the United Nations Sustainable Development Goals is to ensure universal access to water and sanitation by 2030 [ 2 ]. Among other diseases, waterborne infections cause diarrhea, which kills nearly one million people every year. Most are children under the age of five [ 1 ]. At the same time, chemical pollution is an ongoing concern, particularly in industrialized countries and increasingly in low and medium income countries (LMICs). Exposure to chemicals in drinking water may lead to a range of chronic diseases (e.g., cancer and cardiovascular disease), adverse reproductive outcomes and effects on children’s health (e.g., neurodevelopment), among other health effects [ 3 ].

Although drinking water quality is regulated and monitored in many countries, increasing knowledge leads to the need for reviewing standards and guidelines on a nearly permanent basis, both for regulated and newly identified contaminants. Drinking water standards are mostly based on animal toxicity data, and more robust epidemiologic studies with an accurate exposure assessment are rare. The current risk assessment paradigm dealing mostly with one-by-one chemicals dismisses potential synergisms or interactions from exposures to mixtures of contaminants, particularly at the low-exposure range. Thus, evidence is needed on exposure and health effects of mixtures of contaminants in drinking water [ 4 ].

In a special issue on “Drinking Water Quality and Human Health” IJERPH [ 5 ], 20 papers were recently published on different topics related to drinking water. Eight papers were on microbiological contamination, 11 papers on chemical contamination, and one on radioactivity. Five of the eight papers were on microbiology and the one on radioactivity concerned developing countries, but none on chemical quality. In fact, all the papers on chemical contamination were from industrialized countries, illustrating that microbial quality is still the priority in LMICs. However, chemical pollution from a diversity of sources may also affect these settings and research will be necessary in the future.

Concerning microbiological contamination, one paper deals with the quality of well water in Maryland, USA [ 6 ], and it confirms the frequent contamination by fecal indicators and recommends continuous monitoring of such unregulated water. Another paper did a review of Vibrio pathogens, which are an ongoing concern in rural sub-Saharan Africa [ 7 ]. Two papers focus on the importance of global primary prevention. One investigated the effectiveness of Water Safety Plans (WSP) implemented in 12 countries of the Asia-Pacific region [ 8 ]. The other evaluated the lack of intervention to improve Water, Sanitation and Hygiene (WASH) in Nigerian communities and its effect on the frequency of common childhood diseases (mainly diarrhea) in children [ 9 ]. The efficacies of two types of intervention were also presented. One was a cost-effective household treatment in a village in South Africa [ 10 ], the other a community intervention in mid-western Nepal [ 11 ]. Finally, two epidemiological studies were conducted in industrialized countries. A time-series study evaluated the association between general indicators of drinking water quality (mainly turbidity) and the occurrence of gastroenteritis in 17 urban sites in the USA and Europe. [ 12 ] The other evaluated the performance of an algorithm to predict the occurrence of waterborne disease outbreaks in France [ 13 ].

On the eleven papers on chemical contamination, three focused on the descriptive characteristics of the contamination: one on nitrite seasonality in Finland [ 14 ], the second on geogenic cation (Na, K, Mg, and Ca) stability in Denmark [ 15 ] and the third on historical variation of THM concentrations in french water networks [ 16 ]. Another paper focused on fluoride exposure assessments using biomonitoring data in the Canadian population [ 17 ]. The other papers targeted the health effects associated with drinking water contamination. An extensive up-to-date review was provided regarding the health effects of nitrate [ 18 ]. A more limited review was on heterogeneity in studies on cancer and disinfection by-products [ 19 ]. A thorough epidemiological study on adverse birth outcomes and atrazine exposure in Ohio found a small link with lower birth weight [ 20 ]. Another more geographical study, found a link between some characteristics of drinking water in Taiwan and chronic kidney diseases [ 21 ]. Finally, the other papers discuss the methods of deriving drinking water standards. One focuses on manganese in Quebec, Canada [ 22 ], another on the screening values for pharmaceuticals in drinking water, in Minnesota, USA [ 23 ]. The latter developed the methodology used in Minnesota to derive guidelines—taking the enhanced exposure of young babies to water chemicals into particular consideration [ 24 ]. Finally, the paper on radioactivity presented a description of Polonium 210 water contamination in Malaysia [ 25 ].

In conclusion, despite several constraints (e.g., time schedule, fees, etc.), co-editors were satisfied to gather 20 papers by worldwide teams on such important topics. Our small experience demonstrates the variety and importance of microbiological and chemical contamination of drinking water and their possible health effects.

California Drinking Water Regulations Are Putting Cost Over People’s Safety

Health experts have long warned that pollutants like hexavalent chromium , PFAS and arsenic in drinking water are harmful to human health, even at low levels. While efforts to impose stricter drinking water contaminant limits in California, however, are repeatedly stymied by vested interests like polluters and utility groups, it’s the state’s low-income communities and people of color who bear the brunt of lax standards.

Just take the story of public health advocates’ ongoing struggle to protect Californians against the cancer-causing chemical hexavalent chromium, one first brought to the public’s notice by environmental advocate Erin Brockovich.

Earlier this year, the California agency responsible for managing and protecting the state’s water resources — including the drinking water flowing out of California’s faucets — formally adopted a maximum level at which hexavalent chromium can be found in the state’s drinking water.

On its surface, this sounds like a victory, but there’s a catch — the new rule allows for 500 times more of the chemical than was deemed ideal by the state agency responsible for determining health risks posed by long-term exposures to everyday chemicals. That’s even after a marathon regulatory battle spanning decades.

Indeed, it was back in 2001 that officials identified hexavalent chromium for regulatory action. In 2014 , the state adopted an enforceable drinking water limit for the chemical of 10 parts per billion (ppb).

A group spearheaded by the California Manufacturers & Technology Association, a business advocacy organization , and a “ taxpayer association ” challenged that determination in court, arguing the new standards were too financially burdensome to utilities required to filter the chemical out of their water. The Superior Court of Sacramento County agreed, saying state officials had failed to adequately document the financial feasibility of the standard, sending regulators back to the drawing board.

Ten years after the state first instituted a hexavalent chromium drinking water standard, however, it once again adopted a maximum contaminant level (MCL) for the chemical — at the same level as a decade before, 10 ppb.

“We just let all these industries go out and pollute all these areas without any controls for so many years and now we’re stuck cleaning up after them.”

Environmental health experts and community advocates have decried the state’s new regulations, saying the MCL is not nearly protective enough of people’s health. But even against these warnings, it appears that utility groups intend to keep the legal fight over the chemical going.

Furthermore, the decades-long saga surrounding hexavalent chromium highlights a broader concern among health experts and community advocates about drinking water regulations that they say are too permissive and evolve far too slowly: Who suffers as a result?

All too frequently it’s the most vulnerable Californians living in disadvantaged neighborhoods, said Andria Ventura, legislative and policy director for Clean Water Action, an environmental advocacy nonprofit. “Those communities are often already heavily burdened with a whole range of air and water problems that impact them, and a lack of resources to address them,” she told Truthout . “It’s all just pretty horrible.”

How Are Levels Set?

As Tracey Woodruff, director of the University of California San Francisco’s program on reproductive health and the environment, sees it, the heart of the issue is that drinking water regulations, unlike those governing air pollutants, aren’t based on a rich trove of hard scientific data.

“Federal law requires that localities have to monitor for harmful air pollutants, report it to the government, make the data publicly accessible so people can read what the levels are, and then do studies to look at the air pollution and its health effects,” Woodruff told Truthout .

“For water, while there are requirements for localities to monitor for federally regulated contaminants, they do not have to provide the data to a central data base at the U.S. level which would allow people and researchers to do the kinds of studies [needed] to assess their links to health effects,” said Woodruff.

So, how are the standards set?

The California Office of Environmental Health Hazard Assessment (OEHHA) sets public health goals for individual chemicals that regulators use to establish safe drinking water standards. California law, however, doesn’t require regulators to adopt standards at the recommended health goal, but as close to it as is “economically and technologically feasible.”

The cost factor is a salient one for many California water utilities, especially smaller local systems with limited resources, as the state seeks to realize a landmark piece of legislation passed into law in 2012 guaranteeing every Californian the right to “safe, clean, affordable, and accessible water.”

There are currently 386 water systems in the state that are deemed “ failing ”; collectively they serve over 736,000 people.

This means that they currently or consistently deliver water that does not meet drinking water standards. The task of getting these systems up to speed is an expensive endeavor requiring specially trained personnel at the helm of sophisticated and costly equipment.

The state estimates that over the next five years, some $16 billion is needed to ensure that all Californians have ready access to safe, affordable drinking water. Available state and federal funds cover only a small portion of that projected sum.

“In some ways, it can make sense because the cost can get pretty prohibitive for some of these drinking water utilities,” said Woodruff, about the way drinking water regulations must factor in the expense of implementation.

But the juggling act that drinking water officials must negotiate invariably means that too much deference is given to drinking water companies focused on their bottom lines, Woodruff said, while the industrial polluters who cause the contamination in the first place are rarely held accountable for the full cost of remediating their toxic messes.

“This just speaks to how we just let all these industries go out and pollute all these areas without any controls for so many years and now we’re stuck cleaning up after them,” Woodruff added.

A perfect example of this dynamic pertains to per- and polyfluoroalkyl substances (PFAS), a family of more than 6,300 different variants used in everyday products including carpets, textiles, food packaging and firefighting products. PFAS exposures have been linked to cancer, liver damage, decreased fertility and increased risk of asthma and thyroid disease.

PFAS chemicals have been prodigiously used for decades. They appear in almost every American’s blood . But there were no enforceable drinking water PFAS regulations until earlier this year, when the EPA set drinking water limits for six PFAS variants.

Powerful groups like the Association of California Water Agencies (ACWA), however, have pushed back against the new rules, calling them unfeasible “because of the anticipated costs of complying.” Indeed, a variety of water utilities and chemical companies have filed lawsuits challenging the new rules.

“The answer can never be to allow people to drink contaminated water. The answer is to set standards that are as health-protective as possible.”

While these disputes play out in what are sure to be protracted legal battles, California communities already grappling with a host of environmental burdens are disproportionately impacted by PFAS drinking water pollution.

“These are people living in areas where there was dumping of hazardous wastes and a high concentration of industry and factories. These tend to be areas that were originally — even as far back as red-lining — low income communities and communities of color,” said Woodruff, explaining how multiple layers of toxic pollution act in unison to “exacerbate health effects in those communities.”

Who Is Impacted?

Arsenic is one of the top three drinking water contaminants in the state, alongside nitrate and a chemical called 1,2,3-Trichloropropane (TCP). Serious health issues associated with long-term arsenic exposure in drinking water include lung and urinary bladder cancer, diabetes and skin lesions.

California formally revised its arsenic drinking water standard nearly 20 years ago, and is in the process of revisiting it once again. Though arsenic is naturally occurring, it can also be introduced into the drinking water system through industrial and agricultural run-off, making it a bane of the state’s Latinx communities , including in places like the Central Valley, California’s breadbasket. Nor is it cheap to filter arsenic out of the water.

“Arsenic is a good example where the enforceable levels should be lower but the costs go up as you get to these levels,” said Ventura, who added that there are no safe levels of inorganic arsenic exposure. “Given what has happened with hexavalent chromium, there is doubt that public safety will be the priority as some water systems claim the costs will be too high to treat arsenic. But what about the costs of cancer?”

Long-term or high-level exposures to nitrate include major health problems like colorectal, bladder and breast cancer, and thyroid disease. It’s also linked to the potentially fatal blue baby syndrome. The legal drinking water limit for nitrate of 10 ppm was set at the federal level back in the early 1990s. Though the California public health goal for nitrate aligns with this level, growing evidence suggests a lower threshold is required to keep people safe.

Nitrate pollution is a heavily agricultural problem, caused by the over-application of fertilizers. Once again, high drinking water nitrate levels hit California’s poor, rural communities the hardest .

While health experts push for tighter nitrate drinking water standards, there exist state programs designed to restore and protect nitrate-impacted water resources. One of these programs is designed to incrementally decrease nitrate discharges along the Central Coast over the next couple of decades.

“It’s one of the first ag orders of the state which set enforceable limits on nitrate pollution, nitrate discharges and nitrate application,” said Kija Rivers, policy advocate with the Community Water Center, an environmental advocacy group.

But last year, the Central Coast Regional Water Quality Control Board stripped the ag order of a regulatory cap on nitrate application and nitrate discharge, at the behest of industry groups that argued, among other things, that the cap would prove too economically onerous to farmers.

Community advocates have decried that decision , saying that the regulatory cap was a necessary tool to protect vulnerable communities in the Central Coast region, those most affected by widespread and increasing nitrate contamination of valuable groundwater reserves.

“We really need to follow the precautionary principle when it comes to matters like this,” said Rivers. “It takes decades for nitrates to get out of our groundwater basins, so you really need to take this battle on nitrate pollution and come at it head on … before it’s too late.”

As Ventura sees it, California’s “backwards” approach to drinking water regulations could be mitigated by more programs to funnel funds to small, disadvantaged water systems, as well as a long-term low-income water ratepayer assistance program. This would help insulate struggling families from rising costs as water systems make much-needed upgrades.

Last month, however, lawmakers in California — a state with the fifth largest economy in the world — sank the latest attempt to establish such a rate-payer assistance program.

At the end of the day, “the answer can never be to allow people to drink contaminated water,” Ventura told Truthout . “The answer is to set standards that are as health-protective as possible and ensure that all systems have the resources they need to ensure the human right to water.”

How a California county got PFAS out of its drinking water

Yorba Linda is a small, sunny city southeast of Los Angeles. It’s perhaps best known for being the birthplace of President Richard Nixon.

But in the past few years, Yorba Linda has picked up another distinction: It’s home to the nation’s largest per- and polyfluoroalkyl (PFAS) water treatment plant of its kind, according to the city.

EPA puts limits on ‘forever chemicals’ in drinking water

PFAS chemicals have been used for decades to waterproof and stain-proof consumer products and are linked to health problems.

“This December will be [three] years we’ve been running, and we’re the largest PFAS treatment plant using resin,” says J. Wayne Miller , former board president at the Yorba Linda Water District, for whom the plant is named.

Across the country the Environmental Protection Agency estimates there are thousands of water systems, serving around 100 million people, that have harmful levels of PFAS in their drinking water. Under an EPA rule finalized in April , affected water districts will have to take action to clean their water supplies. In Orange County, Calif., the Yorba Linda treatment plant and others around it provide examples of how it can be done.

The Yorba Linda PFAS treatment plant took over a long, narrow strip of the water district’s parking lot, not quite the length of a football field. A series of giant tanks sit atop a concrete platform. “Honestly, they look like large propane cylinders,” says Todd Colvin, chief water system operator for the district.

Each tank looms about 10 feet tall and can hold around 4,500 gallons. There are 22 of them, arranged in a double row, painted pristine ivory white. The tanks are packed half-full with a kind of resin – special polymer beads – that pull PFAS out of the water. Every gallon of water pumped from the district’s wells now passes through a few of these tanks for treatment, before going to the homes and businesses of 80,000 people.

The Yorba Linda Water District built the largest PFAS water treatment plant of its kind because it had a big PFAS problem. In February 2020, the water district had to take all of its wells offline because they were drawing groundwater contaminated with PFAS.

PFAS refers to a large class of man-made chemicals used to waterproof and stainproof manufactured products. Some PFAS chemicals have been linked with various health problems, such as weakened immune systems, high cholesterol and certain cancers.

In Yorba Linda, all 10 of the district’s groundwater wells exceeded California’s recommended PFAS levels, which took effect in 2020 – 40 parts per trillion for PFOS and 10 parts per trillion for PFOA, two common PFAS chemicals. Water providers in the state that exceeded those limits had to stop using contaminated water or notify the public.

Those state limits, established four years before the EPA set national limits, put California’s cities ahead of the curve. “I thank my lucky stars we were on the front end of that,” says Mark Toy, general manager of the Yorba Linda Water District.

Filtration plants are expensive but cost less than imported water

The next city over is Anaheim, home to Disneyland. A few miles from Space Mountain, a paved industrial lot houses the second-largest PFAS water treatment plant of its kind. “This would be a little bit larger than a basketball court,” says Mike Lyster, spokesman for the city, estimating the footprint of the 20 filtration tanks at this site.

Lyster says there was a brief time when Anaheim had the largest PFAS treatment plant. “Kudos to Yorba Linda,” he says, “We’re glad to see somebody else beat it because that means somebody else is addressing the issue.”

Anaheim is a larger city, and the public water utility there can provide water for upwards of 500,000 people a day. Back in 2020, when California’s PFAS rules came into effect, Anaheim took 14 of its 19 wells offline for excess PFAS.

If high levels of PFAS are found in drinking water, a water provider can switch to a source without the chemicals in it or filter them out.

At first, both Anaheim and Yorba Linda swapped mostly to water imported from northern California and the Colorado River that met the state standards. But water from those sources can cost twice as much as local groundwater. Lyster says Anaheim’s water expenses went up by about $2 million a month.

So Anaheim and Yorba Linda fast-tracked construction of those big filtration tanks, to get their wells back in action.

The new EPA PFAS standards are even stricter than California’s: no more than 4 parts per trillion each for PFOA and PFOS, and additional limits for several other PFAS chemicals.

By the EPA’s standards, Anaheim’s remaining wells are now considered contaminated. Lyster says the city will expand its PFAS treatment capacity to comply with the federal rule by 2029. All told, building PFAS filtration for all 19 of Anaheim’s wells is projected to cost $200 million.

Anaheim and Yorba Linda are part of the Orange County Water District — a public agency that manages the region’s groundwater and which helped to design, fund and build the PFAS filtration plants. Across Orange County, more than 100 wells have exceeded the EPA’s new standards. Fixing the problem in the county is expected to cost $1.8 billion dollars over 30 years, according to OCWD.

Pollution from the past is still present

But where is all this PFAS coming from? In Orange County, one of the primary culprits appears to be the Santa Ana River.

Almost a hundred miles long, the Santa Ana River flows through mountains and canyons, the cities and suburbs of San Bernardino and Riverside. Along the way, it picks up PFAS. “We find it in some of just the natural runoff that goes into the river during the winter, during storms,” says Jason Dadakis , executive director of water quality and technical resources at the Orange County Water District. ”We also detect some PFAS coming out of the sewage treatment plants upstream.” There’s also the legacy of factories and military bases in the area.

In Orange County – the Santa Ana River’s last stop before the Pacific Ocean – some of the river water gets diverted to ponds where it can seep into the ground and refill the groundwater, which may have contributed to the contamination, says Dadakis.

And while the PFAS problem in Orange County is currently confined to the northern and central parts of the groundwater basin, Dadakis says wells that aren’t contaminated today could be in the future, based on how water moves underground. “We know that we may have to be prepared to install additional treatment on those wells as they become impacted,” he says.

At least Orange County has a head start on solutions. But with the size of the PFAS problem across the country, its claims on having the largest PFAS treatment plants of their kind in the nation could soon be eclipsed.

The emerging health trend, made popular on social media, is an easy way to stay hydrated and feel fuller longer. Plus, many people notice that putting chia seeds in their water also helps them to lose weight. Still unsure if this blend is for you? What is chia seed water?

Simply enough chia seed water is a glass of water mixed with chia seeds. Catherine Gervacio RD, nutrition writer for Living.Fit, says it’s usually prepared by allowing the chia seeds to absorb the water for a bit before drinking.

“The seeds can absorb a significant amount of water so what happens is that the seeds become gel-like. This consistency slows digestion, making you feel fuller for longer,” says Gervacio.

“Chia seeds are a powerhouse of nutrition, offering a number of benefits in a tiny package,” says Alaa Elhannouny, MS, RDN at Foodsmart. Start with one tablespoon in a glass of water and increase to one and a half or two when you’re ready.

Here, a few reasons why chia seed water should be your next beverage of choice:

1. Chia seed water boosts your fiber intake

Elhannouny points out that every two tablespoons of chia seeds has five grams of fiber. “This makes it easy to boost your daily intake, which is crucial for digestive health and feeling full longer, aiding in weight loss.”

The soluble fiber content in chia seeds is why they absorb water, notes Chris Mohr, PhD, RD , fitness and nutrition advisor at Fortune Recommends Health. Because of that, they support a “healthy and regular digestive system.”

In turn, this helps with weight management. The fiber helps you feel fuller longer and you’ll reduce your overall calorie intake.

Chia seeds are chock-full of omega-3 fatty acids which are great for your heart. They “lower blood triglyceride levels, reduce blood pressure in people with hypertension, prevent the formation of arterial plaque and can also help reduce existing plaque, keeping arteries clear and promoting better blood flow,” explains Gervacio.

They also contain plenty of antioxidants which Elhannouny says are “essential for protecting the body from daily free radical damage and oxidative stress, thus preventing cell damage and disease.”

Drinking enough water is essential to your health, and incorporating chia seeds can also help with hydration. “Adding chia seeds to water can help maintain hydration levels, which helps regulate body temperature and digestion,” says Mohr.

How often should you drink chia seed water.

The amount of chia seed water or how often you should drink it depends on your tolerance, says Gervacio.  She suggests starting small by taking one tablespoon of chia seeds in one glass of water per day.

Everyone has different food tolerances and too much consumption of “chia seeds has led to digestive discomforts like flatulence, loose stools, or cramps,” adds Gervacio.
